Amlou vs. Peanut Butter: The Ultimate Moroccan Spread

If you mention peanut butter to a Moroccan grandmother in the Sous Valley, she might politely decline. Why settle for a dense, industrialized paste when you have access to Amlou?

Often referred to by enthusiastic tourists as “Moroccan Nutella,” Amlou is infinitely more sophisticated, ancient, and healthy than any commercial spread. It is the undisputed king of the Moroccan breakfast table, a liquid gold paste that is wildly addictive and historically precious.

The Holy Trinity of Ingredients

Authentic Amlou is made from only three pure ingredients, and each must be of the highest quality:

1. Roasted Almonds: The almonds must be local, intensely flavorful, and dry-roasted over a fire until they are deeply browned, giving the spread its signature toasted flavor.
2. Pure Argan Oil: This is what makes Amlou so exclusive. The roasted almonds are ground exclusively using culinary Argan oil (which is also toasted), lending an incredibly smoky, complex, hazelnut-like depth.
3. Raw Honey: A generous pour of pure orange blossom or wildflower honey is whisked in to provide a gentle, natural sweetness.

The Traditional Grind

Traditionally, Amlou is not made in a food processor. It is ground by hand using an Rha—a small, circular stone mill operated by a wooden handle. The women of the cooperative drop the roasted almonds into the center hole, pour in the Argan oil, and turn the heavy stone. The friction heats the oils, creating a perfectly smooth, liquid emulsion that simply cannot be replicated by metal blades.

Because Amlou is liquid, you do not “spread” it with a knife. You serve it in a small bowl, tear off a piece of warm, crusty bread, and dip directly into the golden pool.
