This incredibly dense, unbaked sandy paste of roasted flour, almonds, and sesame seeds is our ultimate nutritional powerhouse. It is the very first thing we eat at dawn to sustain us through the long days of fasting.

What are the core ingredients of traditional Sellou?

Authentic Sellou requires a massive amount of manual labor and the finest ingredients from the souk.

  • Flour that has been slowly dry-roasted in a pan until it turns a deep, nutty brown.
  • Vast quantities of unhulled sesame seeds, washed, toasted, and ground to release their oils.
  • Fried almonds, crushed to a powder, mixed with a touch of aniseed and fennel.
  • Pure honey and clarified butter (smen) used to bind the dry powder into a crumbly, rich paste.

Why is Sellou culturally significant?

Beyond Ramadan, Sellou holds a deeply emotional place in our ancestral culinary traditions. It is highly caloric and packed with restorative nutrients, making it the mandated dish given to women immediately after childbirth to help them regain strength. Families will prepare massive buckets of it to serve to the streams of guests who come to visit the newborn, forming it into beautiful pyramids dusted with powdered sugar and whole roasted almonds.

The secret to preventing bitter Sellou

  1. When dry-roasting your flour, you must stir it constantly over very low heat; if even a small section burns, the entire batch of Sellou will taste bitter.
  2. Sift the roasted flour twice through a fine mesh to remove any hard, caramelized clumps before mixing it with your nuts and honey.
