To the uninitiated, the aroma of Smen can be shocking. It is sharp, pungent, and deeply funky, often drawing comparisons to an aged Roquefort cheese. Yet, for Moroccan chefs and grandmothers, it is the undisputed secret weapon of authentic, complex flavor.

Smen is clarified butter that has been kneaded with a strong infusion of salt and wild thyme (za’atar). Once prepared, it is packed tightly into an earthenware jar, sealed, and left to age. In traditional Berber culture, it was sometimes buried underground for months or even years. The longer it ages, the stronger and more prized its flavor becomes. Historically, families would bury a jar of Smen on the day a daughter was born, unearthing it on her wedding day to flavor the couscous.
