Wild Thyme (Zaatar) of the Atlas Mountains

If you ever find yourself driving through the High Atlas Mountains in late spring, you will smell it before you see it. The air becomes sharp, herbal, and bracing. This is the scent of Zaatar, the wild Moroccan thyme that grows clinging to the rocky, sun-baked slopes.

Do not confuse our Zaatar with the mild thyme you might sprinkle over a roasted chicken in Europe, nor with the Middle Eastern spice blend of the same name. Our Zaatar is a single, potent herb—intensely aromatic, slightly bitter, and fiercely medicinal.

The Healer in the Teapot

In a Moroccan home, Zaatar is respected as a healer first, and a culinary herb second. When the winter rains arrive and the dampness seeps into the medina walls, grandmothers do not reach for pills; they boil water.

A pinch of dried Zaatar steeped in boiling water, perhaps with a spoonful of dark honey, is the universal Moroccan cure for a sore throat, a cold, or an upset stomach. Its high essential oil content acts as a natural antiseptic. The taste is incredibly strong—almost medicinal—but it works with an efficiency that commands respect.

Culinary Whispers

While it is primarily medicinal, Zaatar makes strategic appearances in the kitchen. In the north, women might sprinkle a pinch over a fresh, warm goat cheese. In the mountains, a flatbread might be baked with a dusting of the crushed herb. But it is always used with a light hand; its flavor is so dominant that it can easily overpower a delicate dish. It is the wild breath of the Atlas Mountains, captured in a dried leaf.
