  • 3 large Eggplants, charred over an open flame
  • 4 ripe Roma Tomatoes, grated
  • 4 cloves of fresh Garlic, minced
  • 1/4 cup extra-virgin Olive Oil
  • 1 tbsp Ground Cumin
  • 1 tbsp Sweet Paprika
  • A large handful of fresh Coriander, minced
  • A squeeze of fresh Lemon juice
  • 1 tsp Salt (or to taste)
  • 1/2 tsp Black Pepper

Start by gathering your ingredients. The magic always begins with patience and the right spices.

How do you get that authentic smoky flavor?

The secret to a true Zaalouk is fire. Roast your whole eggplants directly over an open gas flame or hot charcoal until the skin is completely blackened and the flesh collapses. Peel away the burnt skin but leave a few charred specks for that signature campfire flavor.

In a wide skillet heat the olive oil and vigorously sauté the grated tomatoes with the garlic cumin paprika and salt until it forms a thick jam-like paste.

Add the roughly chopped smoky eggplant flesh to the skillet. Use the back of a wooden spoon to mash the eggplant into the tomato jam as it simmers.

Let it cook down for another 15 minutes until all the water evaporates and the olive oil begins to separate and glisten on the edges.

Turn off the heat stir in the fresh coriander and lemon juice. Serve it warm or cold in a beautiful deep ceramic plate never flat-plated.
